I would like to share with you today a simple yet tasty chicken recipe. It has a distinct Filipino/Asian flavor. We are going to cook the Filipino Chicken Adobo. It is probably the most famous Filipino dish. Celebrities have been raving about this dish that they tasted from their Filipino friends. This now world-renowned dish is actually very simple to prepare as long as you have the right ingredients. So, hurry and head over to your nearest Asian store to get the ingredients that you need. The best thing about the Filipino Adobo is that you can cook a big batch and just reheat the portion that would fill the appetite of your family and friends. It is one of those foods that taste better over time.

So, here is my simple recipe for the Filipino Chicken Adobo.

  • 1 lb chicken cuts
  • 1 cup vinegar
  • 1 cup soy sauce
  • 5 cloves of garlic
  • 3 pcs laurel leaves
  • a dash of whole peppercorns
  • 2 tsp brown sugar (optional)

I said it would be simple, right? Well,it couldn’t be any simpler than this. Just put all of the ingredients together in a bowl (except the sugar). Cover it for 30 mins. Then put them in a pan and wait for the chicken to be cooked. You can add the sugar at this point if you want it to be on the sweet side. Yup, it’s as easy as that. I also like to cook it over low heat a little bit longer to make sure that the meat would be tender and would absorb all the flavors. Other options to make your Filipino Chicken Adobo more delicious is to put in some boiled egg and top it with lots of crispy garlic. That’s it. This is best served over hot steamed rice.
